The eighth congress of CHIC - the Charming Italian Chefs’s association - saw the admission of Beppe Allegretta, the pastry chef of Milano’s Unico restaurant and the first pastry chef to become a member of the association. The decision epitomises the spirit of a time when desserts have finally been given the same prominences as the other courses in gourmet restaurants. Beppe Allegretta is one of Italy’s most promising pastry chefs. In addition to Unico, he collaborates with Massimo Bottura at Refettorio Ambrosiano and is the founder of Pass121, an association of the best restaurant pastry chefs in Italy. Some of his fortes are Tiramisù Unico, Tributo a Milano (“A Tribute to Milan”), Pensando a una Cassata (“Re-thinking cassata”).
